This Mediterranean chicken pasta with spinach is one of my favourite suppertime recipes because it is ridiculously easy to pull together and feeds everybody without much fuss. The chicken and vegetables cook in one big skillet while the pasta boils, and the whole thing is on the table in about 30 minutes. It is packed with spinach, roasted red peppers, artichokes, olives, feta, and chicken, so you do not even need a separate sauce. Best of all, it makes plenty, and the leftovers are just as good for lunch the next day.
