My daughter invented this tasty breakfast salsa egg burrito recipe as she loves to work her culinary magic in the kitchen. Her specialty? Quick and easy meal ideas usually with eggs or instant noodles. As a hot and spicy food lover it seemed totally normal that she add salsa to her eggs. And voila this insanely tasty combination of scrambled salsa eggs with melted cheddar was born!
Wrapped in a flour tortilla this hot sauce salsa egg breakfast burrito is perfect if you are on the go. As a family of four adults we often go our separate ways during the day but love to make sure everyone is fed well first. Having two men in the house equals big appetites! This means that you can feel free to scale back this recipe as needed.
Furthermore eggs are a great source of protein and pack a good solid energy punch. Which is always a hit in my books. Additionally they are filling, tasty, and relatively inexpensive.


How to Make This Tasty Breakfast Burrito:
Take as many eggs as you would like to make this delicious breakfast recipe. In fact, for our purposes here we used ten which made enough to feed at least six people. Because you are working with a heated pan it’s best to crack eggs into bowl first. No need to mix them together just yet.
Add your butter into the pan to keep the mixture from sticking additionally toss in the white part of the green onion. The white end of the green onion is added now because it’s stronger flavored and you want to add flavor to the eggs. It also takes a little longer for the white onion to cook softer.


Be careful to stir the mixture frequently. You can lift and flip the egg mixture around as needed to mix it thoroughly. We are aiming for drier eggs here. Once they are looking cooked you will add in the old cheddar cheese and stir to mix.


Lastly we add the salsa to the egg mixture and stir it up thoroughly to distribute the salsa. Now here’s where the fun begins. Start by taking the egg mixture and lay a couple of spoonfuls onto your wrap. Sprinkle with sliced green onion greens and as much added hot sauce as you can handle.
I personally prefer my salsa burrito without the additional hot sauce as I get enough heat from the salsa. Around here you can imagine it’s hot salsa. But if you are heat lover then definitely add as much sriracha or other hot sauce as you would like.




Tip: To make folding a burrito easier place the filling in the center of the wrap. Being certain it’s three quarters of the way across the wrap. Be sure to leave that extra quarter of empty burrito wrap as it is going to fold up over the filling. Then bring the sides in and roll snugly.

What size of wraps did you use? We used small sized burrito wraps. You can use larger if you wish. Remember the bigger the wrap the more filling it will take to fill it.
Can these be frozen? Yes you can freeze these wraps. I recommend using tin foil after wrapping in plastic wrap. It will increase the cold temp around the burrito. To eat simply reheat in the microwave for four mins.

- 1 Frying Pan
- 1 Cutting board

Ingredients
- 3 Green onions, diced Separate white parts from green.
- 10 Eggs
- ½ cup Old cheddar cheese
- ½ cup Salsa
- 2 Tbsp Butter
- 7 Lrg. tortilla wraps
Instructions
- Chop the green onions into small pieces. Separate the white part from the green.
- Crack eggs into bowl.
- Chop cheese into small cubes.
- Put butter in hot pan. Let melt.
- Add eggs and white onion parts. Use a spatula to mix as they cook.
- When scrambled eggs are almost complete add the salsa and cheese. Continue to cook.
- When eggs are finished spoon onto tortilla for rolling.
- Add a few raw green onion stems.
- Add your choice of hot sauce! Wrap and enjoy.
