I love this quick and easy carrot apple salad recipe that my mother used to make every winter. Surplus carrots at the end of the growing season needed some reimaging in the kitchen.

As a child I admit I wasn’t overly fond of this salad simply because her apples were often a bit too sour for the sweeter carrots and raisins in the salad. I have changed up her original recipe a bit to use a sweeter apple and changed out her preferred sultana raisins for golden raisins.

Note: If you’re not a fan of raisins you could switch it up and added sunflower or pumpkin seeds instead.

Carrot slaw is a delicious medley of grated carrots, diced apples, and golden raisins with a tangy homemade salad dressing. You will want to make this ahead of time to give it time to chill properly. The salad should chill for a minimum of one hour.

How to Prepare This Easy Slaw Salad:

Start by preparing the carrots with a grater. Peeling and coring your apple is a choice. Some prefer to leave the peel on as the peel does contain vitamins. I dice the apples into bite sized pieces and then toss with the carrots and raisins.

  • 1 peeler
  • 1 knife

Ingredients
  

Carrot Apple Salad

  • 4 med carrots Room temperature carrots are easier to cut up.
  • 1 small apple Any crisp apple variety works
  • 1/4 cup golden raisins You can use any raisins or leave out entirely
  • 1/2 tsp black pepper

Dressing

  • 1/4 cup mayonnaise
  • 1/3 cup rice vinegar you can use white vinegar if you don't have rice vinegar
  • 2 tsp white sugar add more if you like a sweeter dressing

Instructions
 

  • Start by washing and peeling the carrots and apple.
  • Grate carrots up into bowl.
  • Dice cored apple into bite sized pieces.
  • Add raisins if using
  • Mixed the mayonnaise with vinegar and sugar.
  • Mix the dressing into the vegetable/fruit and sprinkle the pepper over it.
  • Let chill for an hour at least before serving
