I love this quick and easy carrot apple salad recipe that my mother used to make every winter. Surplus carrots at the end of the growing season needed some reimaging in the kitchen.

Ingredients
Carrot Apple Salad
- 4 med carrots Room temperature carrots are easier to cut up.
- 1 small apple Any crisp apple variety works
- 1/4 cup golden raisins You can use any raisins or leave out entirely
- 1/2 tsp black pepper
Dressing
- 1/4 cup mayonnaise
- 1/3 cup rice vinegar you can use white vinegar if you don't have rice vinegar
- 2 tsp white sugar add more if you like a sweeter dressing
Instructions
- Start by washing and peeling the carrots and apple.
- Grate carrots up into bowl.
- Dice cored apple into bite sized pieces.
- Add raisins if using
- Mixed the mayonnaise with vinegar and sugar.
- Mix the dressing into the vegetable/fruit and sprinkle the pepper over it.
