Halve the grape tomatoes and scatter them over the spinach so their juices can seep down as they roast.

Use a spoon to spread blobs of the soft Rondelé garlic and herb cream cheese evenly over the surface in small mounds; this helps it melt into every corner. Bake covered for 20–30 minutes, until the tomatoes are soft and the cheese is melty.

​Substitutions And Add-Ins For This Simple Pasta Bake With Cream Cheese

Penne pasta. This is easily replaceable; swap for rotini, rigatoni, or macaroni.

Fresh spinach. Can be replaced with kale, arugula, beet tops, or Swiss chard. Don’t use a vegetable that your family isn’t keen on. Additionally, spinach cooks down more easily than tougher ingredients, so you may need to give other ingredients a quick blanch or bake for a longer period. 

Grape tomatoes. Any juicy tomato replacement will work. Try it with cherry tomatoes or even a sundried tomato packed in oil. 

Rondelé garlic and herb cream cheese. Rondelé is widely available in Canada, but Boursin or Philadelphia Whipped Herb Cream Cheese also make excellent options. Instructions
 

  • Preheat oven to 400F

    10 Cups Penne Pasta
  • Spread the hot pasta evenly in the bottom of a deep casserole dish. (9x13x3)
  • Top with a thick, 1-inch layer of fresh, washed spinach leaves.

  • Arrange halved grape or cherry tomatoes over the spinach..
    4 Cups Grape Tomatoes
  • Spoon garlic and herb cream cheese in small mounds across the top.
    1½ Cups Herb & Garlic Cream Cheese
  • Cover and bake at 400°F (200°C) for 20–30 minutes, until the tomatoes are softened and the cheese is melted.
  • Gently stir everything together right in the pan so the cream cheese coats the pasta in a creamy sauce. Serve immediately.
