Soft, thick maple oatmeal cookies made with butter, brown sugar, maple syrup, ginger, and cloves. This easy one-bowl cookie recipe produces rounded cookies with golden edges and a gentle maple-spice flavour.
In a large mixing bowl, cream the softened butter, white sugar, and brown sugar together until well combined.
1 Cup Butter, ½ Cup White Sugar, ½ Cup Brown Sugar, 1 Egg, ¼ Cup Maple Syrup
Add the egg and maple syrup. Mix until incorporated.
Add the oats, flour, baking soda, salt, ground cloves, and ground ginger to the same bowl. Mix until the dry ingredients are incorporated and a dough forms.
1 Cup Quick Oats, 2½ Cups All-Purpose Flour, 1 Tsp Baking Soda, ½ Tsp Salt, ½ Tsp Ground Cloves, ½ Tsp Ground Ginger
Roll the dough into balls and arrange them on the baking sheet, leaving space between each cookie. Leave the balls unflattened for a thicker, rounded cookie.
Bake on the centre rack for 12–13 minutes, until the edges are golden brown and the tops look dry.
Remove from the oven and allow the cookies to firm up on the baking sheet for a few minutes before transferring to a cooling rack.
Notes
Butter too soft? Partially melted butter is fine. If the butter has completely melted and the finished dough is too soft to roll, refrigerate until it firms up.Cookie Shape: Leave the dough balls unflattened for thicker, rounded cookies. Flatten slightly if preferred.Doneness: Look for golden brown edges and dry-looking tops. Avoid baking until the entire cookie is dark brown.Baking Sheet: A non-stick baking sheet gave the preferred result.
