Red Cabbage And Onion Saute A Simple Healthy Side Dish

This simple side dish of red cabbage and onion saute is a great low-cost idea. It's healthful, and can easily be made vegan/vegetarian and is low-calorie too! The flavorful side dish takes only twenty minutes to make for a colorful pop on the dinner table. It goes great with roasts and pork chops.

½ Small Red Cabbage Sliced 2 Cups Red Onion Sliced in Wedge Sections 2 Cups Chicken Broth ¼ Cup Salted Butter
On a cutting board slice the head of cabbage in half removing the white core and any damaged outer leaves. Slice thinly.

Peel and cut into wedges the red onion set aside.
2 Cups Red Onion
In a large frying pan (sauté pan) heat on medium-high heat the chicken broth and add the cabbage.

Cover the pan and let cook for 5-8 minutes to allow the cabbage to steam and soften.
Uncover and add the red onion sections. Stir with spatula to mix the onion in and break the sections apart.

Continue to cook uncovered stirring occasionally so the broth steams off while the vegetables soften.
When the broth is almost all gone add the butter in pieces over the surface and mix in. Let cook for one more minute.
¼ Cup Salted Butter
Serve while hot.
