Maple Sugar Banana Oatmeal Coffee Cake With Maple Candied Pecan Streusel

This fluffy coffee cake is a perfect flavor pairing of maple and banana. The candied maple pecan streusel topping adds texture and a touch more depth flavor. This is such a tasty snack cake perfect for tea time or school lunches.

Maple Sugar Banana Coffee Cake 1½ c. all-purpose flour ¾ c. oatmeal 1 tsp baking powder ¾ tsp baking soda ½ tsp salt ½ c. butter, softened 1 c. pure maple sugar, powdered 2 eggs 1 tsp vanilla 2 ripe bananas ⅓ c sour milk Candied Maple Pecan Streusel 2 c. candied pecans ⅓ c maple sugar 3 Tbsp flour 2 Tbsp butter
For the cake batter In a mixing bowl add the flour, oatmeal, baking powder, baking soda, and salt. Mix well and set aside.
Cream together in the other bowl the maple sugar and butter.
Add in the eggs and vanilla.
Beat in bananas and sour milk.
Fold the dry ingredients into the wet ingredients. Mix only enough to blend.
For the streusel topping Blend the flour, sugar, and butter well.
Add in the candied nuts and mix together.
Assembly + Baking Spread the cake batter into a prepared 9 by 13 baking pan.
Sprinkle the streusel topping evenly over the top of the entire cake.
Put cake into pre-heated oven at 375°F for 20 to 25 minutes. Or until the cake tests done.
