Maple Sugar Banana Oatmeal Coffee Cake With Maple Candied Pecan Streusel

  • 1 9 by 13 baking pan

Ingredients
  

Maple Sugar Banana Coffee Cake

  • c. all-purpose flour
  • ¾ c. oatmeal
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • ½ c. butter, softened
  • 1 c. pure maple sugar, powdered
  • 2 eggs
  • 1 tsp vanilla
  • 2 ripe bananas
  • c sour milk

Candied Maple Pecan Streusel

  • 2 c. candied pecans
  • c maple sugar
  • 3 Tbsp flour
  • 2 Tbsp butter

Instructions
 

For the cake batter

  • In a mixing bowl add the flour, oatmeal, baking powder, baking soda, and salt. Mix well and set aside.
  • Cream together in the other bowl the maple sugar and butter.
  • Add in the eggs and vanilla.
  • Beat in bananas and sour milk.
  • Fold the dry ingredients into the wet ingredients. Mix only enough to blend.

For the streusel topping

  • Blend the flour, sugar, and butter well.
  • Add in the candied nuts and mix together.

Assembly + Baking

  • Spread the cake batter into a prepared 9 by 13 baking pan.
  • Sprinkle the streusel topping evenly over the top of the entire cake.
  • Put cake into pre-heated oven at 375°F for 20 to 25 minutes. Or until the cake tests done.
