Leftover Mashed Potato Egg Nests For Breakfast

This breakfast recipe uses leftover mashed potatoes as egg bowls. Baked with an egg in the center it makes for a hearty satisfying breakfast. No toast will be needed with this Canadian style breakfast!

Equipment

  • 1 baking sheet
  • parchment paper

Ingredients
  

  • 2 cups leftover mashed potatoes If you have more than that just make more nom nom.
  • 4 eggs
  • 2 Tbsp melted butter
  • Optional: Shredded cheese
  • Optional: Chives or green onions

Instructions
 

  • Place parchment onto pan. Using scoop/spoon measure approx 1/2 cup for each potato mound. Hollow out a hole in center for eggs.
  • Drop eggs into center of each potato bowl.
  • Use melted butter to coat the outside of potato bowl to crisp it.
  • Bake in hot oven 400°F for 15 mins.

Notes

Note: Your eggs will appear glassy when cooked. Your potatoes need to get heated through so make sure to increase oven temp as needed depending on your oven. Mines a newer stove which doesn't always cook too hot in the oven. So I did our eggs at 425°F. 
These are a hearty dish and no toast will be needed to go with. Serve with a side of peameal bacon for an extra treat. Peameal bacon is decidedly cheaper to purchase as compared to regular bacon or sausage making it a more economical choice.
