These homemade fudgy cocoa powder brownies are made with simple pantry ingredients, including four eggs and oil instead of butter. Mixed in one bowl and baked in a 9×13-inch pan, they have a rich chocolate flavour and an extra-moist, fudgy centre.
Preheat the oven to 350°F (175°C). Lightly oil the bottom and sides of a 9×13-inch baking pan.
Add the flour, granulated sugar, cocoa powder, and salt to a large mixing bowl.
1½ Cups All-Purpose Flour, 2 Cups Granulated White Sugar, ½ Cup Unsweetened Cocoa Powder, 1 Teaspoon Salt
Pour in the neutral oil and vanilla extract, then add the four eggs. Begin mixing the wet and dry ingredients together, scraping the bottom and sides of the bowl as needed.
1 Cup Neutral Oil, 2 Teaspoons Vanilla Extract, 4 Eggs
Gradually pour in the cold water while continuing to mix. Blend until the ingredients are fully incorporated and the batter is thick, smooth, and creamy, with no visible pockets of dry ingredients.
¼ Cup Cold Water
Transfer the brownie batter to the prepared baking pan. Spread it evenly into the corners using a spatula.
Bake in the preheated oven for 30 minutes. The surface should be set, but the brownies should remain moist and fudgy in the centre.
Remove from the oven and allow the brownies to cool completely in the pan before removing or cutting. Once cooled, loosen the edges and cut into 16 squares, or your preferred serving size.
