Easy Southern Cornbread Casserole With Frozen Vegetables

This easy Southern cornbread casserole with frozen vegetables whips up in a flash. Bake it in a hot oven for a fluffy bread topped meaty dish that is the ultimate in comfort food. With ground beef and bell peppers the rich tomato sauced casserole is a hearty family meal everyone loves.

Ingredients
  

The Casserole Base

  • 3 lbs Ground Beef
  • 2 Cups Mixed Frozen Vegetables
  • 1 Tbsp Italian Seasoning
  • 1 Cup Green Bell Pepper Chopped
  • 1 Cup Red Bell Pepper Chopped
  • 1 Lrg Onion Chopped
  • 2 Cups Tomato Sauce

Cornbread Topping (Can be baked separately)

  • 2 Cup All Purpose Flour
  • ½ Cup White Sugar
  • 8 Tsp Baking Powder
  • Tsp Salt
  • 2 Cup Cornmeal
  • 4 Lrg Eggs
  • 2 Cups Milk
  • ½ Cup Neutral Oil

Instructions
 

  • In a large mixing bowl toss all the cornbread ingredients together and beat until smooth. Set aside.
    2 Cup All Purpose Flour, ½ Cup White Sugar, 8 Tsp Baking Powder, 1½ Tsp Salt, 2 Cup Cornmeal, 4 Lrg Eggs, 2 Cups Milk, ½ Cup Neutral Oil
  • Add the ground beef to a hot frying pan and brown on medium high heat.
    3 lbs Ground Beef
  • When almost fully browned add the frozen vegetable mix. Allow to thaw.
    2 Cups Mixed Frozen Vegetables, 1 Tbsp Italian Seasoning
  • Add the peppers and onions, spice and cook until onions are becoming translucent.
    1 Cup Green Bell Pepper, 1 Cup Red Bell Pepper, 1 Lrg Onion
  • Add the pasta sauce and mix well. Pour the meat mixture into a deep casserole dish.
    2 Cups Tomato Sauce
  • Cover the meat mixture with the cornbread batter and spread evenly around.
  • Bake in a preheated 350℉ for 30-40 minutes or until the cornbread has baked completely.
  • Serve while hot.
