Air Fryer Chicken and Potatoes (Roast Dinner for Two)

Bone-in, skin-on chicken breasts seasoned with poultry seasoning, garlic powder, and onion powder roast directly over halved potatoes in the air fryer. As the chicken cooks, its fat and juices drip onto the potatoes, giving them a traditional roast-dinner flavour without cooking a whole chicken.

Ingredients
  

  • 800 grams Chicken breasts 2x Bone-in, skin-on
  • 900 grams Potatoes 4-6 Peeled, washed, cut in half
  • Olive oil Enough to brush chicken
  • 1 Tsp Poultry seasoning
  • ½ Tsp Garlic powder
  • ½ Tsp Onion powder
  • ¼ Tsp Salt
  • ¼ Tsp Black pepper

Instructions
 

  • Wash and peel the potatoes, then cut them in half. Rinse if necessary and pat dry.
  • Arrange the potato halves across the bottom of the Ninja air fryer basket in a reasonably even layer.

  • Brush both sides of the chicken breasts lightly with olive oil.
    800 grams Chicken breasts, Olive oil
  • Sprinkle both sides of the chicken with poultry seasoning, garlic powder, onion powder, salt, and black pepper.
    1 Tsp Poultry seasoning, ½ Tsp Garlic powder, ½ Tsp Onion powder, ¼ Tsp Salt, ¼ Tsp Black pepper
  • Place the seasoned chicken breasts directly over the potatoes, with the skin facing upward.
  • Set the air fryer to 400°F (204°C) and cook for 20 minutes.
  • Carefully turn the chicken breasts over so the skin is facing downward against the potatoes. Continue cooking for approximately 20 minutes.
  • Check the chicken with a meat thermometer inserted into the thickest part without touching the bone. The chicken must reach 165°F (74°C). Check that the potatoes are fork-tender. If the chicken finishes first, remove it and continue cooking the potatoes until tender.
  • Serve the chicken and potatoes hot with your choice of vegetables or another side dish.

Notes

  • Chicken: Use large bone-in, skin-on chicken breasts. The skin provides fat and flavour for the potatoes underneath.
  • Potatoes: Use four to six depending on their size, your appetite, and the capacity of your air fryer basket.
  • Poultry seasoning: Use a fresh, fragrant blend. Dried herbs lose potency over time, so replace the seasoning if its aroma has faded.
  • Cooking time: Forty minutes is the approximate cooking time for the large bone-in breasts used in this recipe. Actual time varies with chicken size and air fryer model.
  • Storage: Refrigerate leftovers promptly in covered containers for up to two to three days. Reheat thoroughly to 165°F (74°C).
