Easy Curried Red Lentils a Simple Side For Dinner


This recipe for curried red lentils is a favorite around here. The red lentils cook really fast so this tasty side dish almost makes itself! Red lentils are purchased for a really low price in a bag dried. You won’t likely find them canned as they get mushy when overcooked. I love red lentils for the fact that they do cook so readily. Green lentils and brown lentils take  a whole lot longer.

If you aren’t familiar with lentils they have been around for millennia and have actually been found in archeological sites. Coming from the pulse crop of legumes with edible seeds- long story short lentils are a tasty addition to many culinary recipes. They actually are the third highest in protein too making them ideal for many vegan and vegetarian dishes.

Let’s get going making this tasty curried red lentil side dish!

The easiest way to cook any multi-step dish is to make sure you have all the ingredients prepared, measured and close at hand. This is especially true if you are working solo in the kitchen. So dice your onion, and mince the garlic. Measure your spice out and have red lentils measured ready to add in.

Start by heating the saucepan. We are going to sauté the onions and garlic together in a little oil. Sauteing takes only a couple of minutes you are looking for the onion to go from opaque white to a glassy translucent appearance.

I don’t know about you but the smell of onions and garlic cooking always is satisfying to me. It speaks to the fact that something really good is being prepared and indeed this dish is tasty!

Once the onions and garlic have sautéed you can now add in the red lentils and stock. If you’re using the bouillon and water method as we did go ahead and add the water and cubes of bouillon. We want the red lentils to cook which they literally do in just a matter of minutes. Be careful to not overcook. At this point you can also add in the curry powder.

Your finished curry side dish is read to serve! It will look somewhat mushy but not overly. If you prefer you can sub in a different lentil. Canned green or brown also make an easy meal idea. Since they will already be cooked you simply want to add a little liquid and the spices to the lentil, onion, garlic.

This easy side dish goes great with lamb. In fact we love it with our basic lamb chop recipe!

Your Questions Answered:

If I used dried green lentils how long would it need to cook? Most packages of dried lentils will explain the cooking process on the back of the package. Be certain to follow directions for cooking. You can then just mix the cooked lentils into the sauteed onions and spices.

Will this dish keep in the fridge? No unfortunately if you have cooked red lentils they don’t really do well reheating. The longer they cook the mushier they become.

  • 1 Sauce Pan
  • 1 Knife to chop
  • 1 Cutting board
  • 1 measuring cup


  • 1 Cup Red Lentils
  • 3 Cup Vegetable Stock Low sodium is best *optional bouillon cubes with water
  • 2 Large Onions Chopped
  • 3 Tbsp Butter or Oil
  • 1 Clove Garlic Minced
  • 1 Tsp Curry Powder


  • Saute onions, garlic, in oil.
  • Add stock or water & bouillon
  • Add in remaining ingredients. Cook over med/low heat until lentils are done.
  • Serve while hot.
